At the core of its success was Kenji Tanaka, a stoic and meticulous chef from Osaka, Japan. For eight years, he had poured his soul into every plate, earning the trust of the owners and regulars alike. His touch with broths and his discipline in the kitchen made him indispensable. He wasn't just a chef—he was the restaurant's spine.

One summer, the owners hired another chef to support the growing customer base.
