The eyes are the most delicious part of an animal, but they're more suited to the locals.
It's like in the Northwest, many people find fish eyes disgusting, yet think that sheep eyes cooked are incredibly delicious. In the Southeast, many people find fish eyes uniquely flavorful but can't accept sheep eyes at all.
Similarly, there are pig eyes and cow eyes, which are different from fish and sheep eyes; they both burst with juice and are tastier when roasted.
Especially cow eyes, they are four times the size of pig eyes and are often cooked and then roasted. Moreover, compared to pig eyes, cow eyes are even fattier. They taste like Chinese fatty brisket or the strip of fat on a Western sirloin steak when roasted.
If using the common merchants' phrase "This is the most exercised part of the cow" for evaluation, the meat around the cow's eyes is indeed the most exercised part — no meat understands activity better than me!
