The reason he said "should" is that even he couldn't be 100% sure; the fantasies in his mind always had a slight gap with reality.
He had never stood face-to-face with an armed person, so he couldn't guarantee that he could split a bullet.
He also couldn't be sure about the quality of a real sword. To split a bullet, the material of the blade must be extremely good to do so without chipping the edge.
